Sorrel Salad with Creamy Chive Dressing
Dressing
- 1/4 c. whole-milk yogurt
- 1 Tbls. extra-virgin olive oil
- 1 Tbls. lemon juice
- 1 Tbls. minced shallot
- 1 Tbls. chopped fresh chives or garlic scrapes
- 1 tsp. sugar
- 1/2 tsp. Dijon mustard
- 1/4 tsp. sea salt
Salad
- 4 c. sorrel – choose tender young leaves and torn into bite-size pieces
- 1/2 c. loosely packed flat-leaf parsley
Make dressing: Whisk together dressing ingredients. Can be made in advance. Refrigerate until using.
Toss salad. Season with salt and pepper.
