In this episode of Quick Kitchen Tips, Coho Restaurant Sous Chef Samantha teaches you how to properly sear a scallop. Your scallop will be seared to a golden brown and cooked through but not overcooked.
First things first, dry your scallop completely so there is no excess water. Place a paper towel on top of a plate, lay your scallops out, place another paper towel on top of the scallops, and allow to sit at room temperature for five minutes. During this time, add oil to a nonstick skillet and place over high heat. The pan is hot enough when you place a scallop in the oil and it immediately starts sizzling. Cook the scallops in the hot pan for three to four minutes. Once browned, flip each one over and cook for an additional minute.
