The San Juan Islands Ag Guid at the Brickworks is kicking off their Live Life Well Culinary Education Series! These exciting events will invite chefs, cookbook authors, restauranteurs and other local gastronomes to come in and get a chance to show off their culinary chops. They will include intimate and interactive classes, workshops and dining events. I’m getting hungry just thinking about it.
This first event, Friday January 31 at 6 p.m., is called a celebration of Offal – a head to tail dinner that attempts to demystify the weird, meaty bits of an animal.
In this workshop, you can participate in a hands-on cooking demonstration and workshop focused on the preparation of a variety of offal dishes, followed by dinner, wine, and stories from the back paddock by the island’s food-obsessed farm boy!
The menu includes crispy pig tails and pickled cucumbers with plum ketchup, lamb heart and kidney kebabs with parsnips and gooseberries, tongue and cheek with kohlrabi salad, seared foie gras with grilled pear and toast, and a surprise dessert.
