This is a Mediterranean-inspired “Club” Sandwich. Have fun adapting this concept with your favorite sandwich fixings.
Serves 2
1/2 Baguette
1 Roasted Red Pepper, thinly sliced
1 c. Hummus
7 Asparagus, grilled
1/4 c. Feta Cheese
1/4 c. Black Olives, pitted and sliced
2 Tbsp. Pesto
1 c. Herbed Whipped Cream Cheese
Fresh chives and edible flowers for garnish
1. Slice Baguette into thirds lengthwise.
2. Smear hummus on bottom layer and then layer on Roasted Red Peppers.
3. Smear pesto on second layer and then add asparagus, feta and black olives
4. Place top on sandwich
5. ‘Frost’ entire sandwich with herbed whipped cream
6. Garnish and Enjoy!
