A New Holiday Bread: Harvest Loaf

Looking for a new addition for your holiday table? Or maybe a tasty gift alternative for a friend or family member? This special holiday bread recipe comes from the San Juan Island Inn Collection’s circles- a family secret from our beloved Maria, the “Fruit Lady”. This cake-like bread is an item she is known for within her family during the holiday season. After Maria’s recently delivery of 5 boxes of pumpkins to the property, we will certainly be baking this bread this fall. If you stay with us, you may see it as your afternoon snack or in your breakfast to-go! Either way, she graciously gave the OK to share it with you! Happy Baking!

This recipe makes one large loaf.

Ingredients

Dry

  • 1 3/4 c flour
  • 1tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves

Wet

  • 1/2 c melted butter
  • 1 c sugar
  • 2 eggs
  • 3/4 c pumpkin

Chips/Nuts

  • 3/4 c chocolate chip
  • 3/4 c walnuts
  • 1/3 c butterscotch chips

Method

  1. Mix dry ingredients in one bowl.
  2. Next, mix wet ingredients in separate bowl.
  3. Mix the two bowls together slightly – do not over stir!
  4. Add in chips and nuts.
  5. Grease and flour one large bread loaf pan.
  6. Bake at 350 F until wooden toothpick comes out clean.
  7. Enjoy!!
